After several months of some serious renovations and expansion our local Foodland has a brand spanking new look.
Along with adding a bakery and deli, the store has also doubled the variety of groceries and goods offered.
Foodland took over the store last October and immediately began the enormous and expensive renovation project to bring a bigger and better store to our community.
The expansion also created a need for more employees. Manager Ted Daamen says he has recently hired 26 new employees, bringing the total job count to 31 positions at our Foodland, which is wonderful for our local economy!
The store is beautiful inside and certainly offers much more variety in all departments.
I was intrigued to find plantains in the produce section when I dropped by the other day.
Plantains look like bananas, and are indeed related to bananas, but they must be cooked to eat them. They are a fruit that is treated like a vegetable. They have a starchy texture and are eaten in their native tropical lands like we eat potatoes here.
You can cook and eat plantains at any stage of ripeness, green through black. When they are black they are at their softest and sweetest. At this point, you can roast them in their skins at 375 degrees for 45-50 minutes and serve them with salt, pepper and a pat of butter.
Plantains are a staple in the Latin Caribbean diet. They are prepared many different ways, but tostones are the quickest and easiest. It’s a perfect recipe for beginners. You can serve the tostones immediately while they’re warm as a side dish or as a snack with dip.
Tostones are served and eaten just like we North Americans eat French fries!
Plantain Tostones
Ingredients:
· 2 green plantains
· Oil for frying
· Salt
Preparation:
1. Heat the oil to 375 degrees.
2. While the oil is heating up, peel the green plantains and then cut them into 3/4 inch slices.
3. Fry the slices in the hot oil for 3 minutes. They should be a light golden color and semi-soft.
4. Remove the plantain slices with a slotted spoon and drain on paper towels.
Tip: Keep oil hot.
5. When the plantain slices are cool enough to handle (about 1 minute), smash them into flat rounds.
6. Fry the rounds in the hot oil for 3 minutes. They will turn crisp and golden brown.
7. Remove the tostones with a slotted spoon and drain on paper towels. Salt to taste.
Serves: 3-4 people.
